Cheesy" Taco-Mac
Quick and Easy Summer Recipe
1/2 packet Country Chile Con Queso Dip Mix (dry)
1-1/2 cups uncooked rotini pasta (may use other pasta types)
1/2 pound ground beef
1 packet (1-1/4 oz. approx.) taco seasoning mix
2 (15 oz.) cans diced tomatoes, undrained
1-1/2 cups water
1/2 tsp. salt - optional In Dutch oven (or other similar large pan), brown ground beef. Drain/rinse/drain any fat from cooked meat. Add all remaining ingredients. Stir/mix well. Bring to a boil, reduce heat to low, cover tightly and simmer 20 minutes or until pasta is tender. May garnish with shredded cheddar cheese before serving. Serve immediately.
Sweet & Nutty Chicken
1 packet Country Honey Apple Pecan Dip Mix (dry)
4 chicken breasts, boneless/skinless (halves)
2 T. vegetable oil; or 2 T. melted butter or oleo, cooled slightly
1/4 cup prepared yellow mustard
1 teaspoon curry powder
1/2 teaspoon salt
1/2 cup water
Place all ingredients EXCEPT CHICKEN in a large, heavy plastic bag. Close bag. Using hands, "squish" ingredients inside of bag together to mix. Open bag, add chicken and mix slightly so chicken is coated. Allow to marinate 2 to 24 hours in refrigerator. When ready to bake, preheat oven to 400 degrees. Grease 9x13 inch baking pan and place chicken in a single layer in pan. Pour any remaining sauce evenly over chicken. Cover with foil and bake 30 minutes. Remove foil, baste chicken with sauce and continue baking uncovered for approximately 15 to 30 minutes longer, or until chicken is completely cooked. Serve with rice.
Honey Apple Snack Cake
One 9 oz. package yellow cake mix (we use Jiffy brand)
1 egg
3/4 cup water
2 tablespoons oil
1 packet Country Honey Apple Pecan Dip Mix unprepared
Preheat oven to 350 degrees
Grease an 8x8 square pan (or 8 inch round)
Mix together cake mix, egg, water and oil. Beat for one minute with mixer or 200 strokes by hand. Stir in Dip Mix. Mix well by hand. Pour into prepared pan. Sprinkle on optional topping, if desired. Bake 20-30 minutes. Cake is done when it springs back when pressed lightly in the center.
Optional Topping
Mix togeth 1/4 cup sugar and 1 teaspoon cinnamon. Sprinkle over cake batter in pan before baking.
This cake is best the next day. Bake the night before for a wonderful brunch cake. ENJOY!
