Basic Curry Sauce Ingredients
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1/2 teaspoon of turmeric
inch piece of ginger
10 cloves of garlic
tin of tomatoes
3 large onions
3 tablespoons of groundnut oil or ghee (although any oil will do really)
Preparation
Grind all your spices as fine as possible
Mash your garlic and ginger together into a paste
Roughly chop your onions
Heat up the oil in a large pan and add the onions and garlic/ginger paste cook this on a medium heat till the onions are soft.
Throw in your spices, turmeric, cumin and coriander, and still round for a minute so it doesn't stick and burn, if it does start to stick too much add a splash of water.
Add the tomatoes and leave to simmer gently for 20 minutes, if need be add a little water.
Then blend till it is the consistency of lentil soup.
You now have your basic curry sauce which is the basis of every curry I make. This will make a few currys for you and should store in a fridge for 3 days, you may also freeze it.
If you want to make more in one go thats fine, just double up. (or even treble!)
