Chicken Enchiladas Suiza Recipe
Chicken Enchiladas Suiza Enchiladas are a traditional Mexican dish that have a variety of different fillings to suit your guests. This recipe has shredded chickem with sauteed spinach and onions. It tastes great and looks really good as well. The creamy white sauce on top is called 'Suiza' which is the Spanish word for Switzerland. INGREDIENTS: 12 corn tortillas 2 cups shredded chicken 4 oz. cotija, crumbled 5 oz. evaporated milk 15 oz green chile sauce 6 oz. chopped, roasted and skinned fresh green chiles 3 cups fresh spinach 1/2 cup chopped onion 1 cup sour cream Queso Quesadilla cheese Warm oil for dipping tortillas in INSTRUCTIONS: Heat 1 tablespoon oil in a frying pan on med heat and cook the onions for about 1 minute. Add the spinach and cook for a further 5 minutes until leaves are wilted. Mix in the chicken and green chiles and put the mix to one side. In a thick bottomed saucepan heat the sour cream, evaporated milk, cotija and chile sauce over low heat until sauce is smooth. Make sure you stir often to prevent sticking. Coat the base of a baking tray with a thin layer of sauce and add place a tortilla on it that has been softened by dipping in the warm oil. Put 1/4 cup of mixture on the centre of a tortilla and add 1 tablespoon of Queso Quesadilla cheese on top. Roll up the tortilla and place on the baking tray seam down. Continue this process untill all the tortillas have been used. Pour the remaining sauce over the tortilla wraps and then the green chile sauce. Crumble some more cheese over the top and bake in a pre-heated oven (180C) for about 15 minutes and the cheese has melted.
