How To Cook A Vegetarian Scotch Egg Ingredients Amount Vegetable mixture for coating Potatoes: 60 g Peas: 25 g (shelled) Green chilli: ½ Bread slice: ½ Salt: ½ tablespoon Red pepper: 1/8 tablespoon For scotch eggs Egg ( hard boiled): 1 Egg ( for coating): ¼ Corn Flour: 1 tablespoon Bread crumbs: for coating Fat: for frying Method 1. Boil the peas and potatoes and mash them well. 2. Add chopped chilli, seasoning and bread(soaked in water and squeezed out). Mix well 3. Cool the hard boiled egg and shell it 4. Roll egg in dry corn flour 5. Place vegetables mixture on palm of hand, flatten it. Place the egg over its center and cover it completely with the mixture on all sides. 6. Dip in beaten egg and roll in bread crumbs 7. Deep fry in hot fat till golden brown all over. 8. Cut into two halves and serve hot garnished with onion rings and tomato sauce.
