How to make Refried beans
Refried beans are one of my favourite side dishes and are simple to make. Ingredients
2 cups of dried pinto beans
1 onion, roughly chopped
2 cloves of garlic, crushed
1 teaspoon of mild chilli powder
salt Method Soak pinto beans in plenty of water overnight. Boil pinto beans in a large pan of water for 1 hour
add the chopped onion, garlic and chilli powder Simmer on a low heat until almost all water has gone and the pinto beans are breaking up. Mash with a potato masher and transfer to an oven dish Add a little water and some salt to taste and bake in a medium oven for 1 hour. The pinto beans should look like a very thick mush after this and are ready for eating. Yum
