Quick Supper

Thinly slice some uncooked pork, beef or chicken and marinade in equal parts dry sherry and soy sauce for an hour (I often leave it for 3 or 4 hours).
When you want to eat make up some couscous with your favorite flavours. I use ready flavoured packet mixes, they take about 5 minutes.
Then add a little sesame oil to a hot deep frying pan and stir fry the marinaded meat for 2 or 3 minutes before throwing in a few handfuls of baby spinach leaves and cover the pan for a minute. Then stir for a minute and serve on top of the couscous.
Apart from the marinade time the preparation and cooking takes only about 10 minutes, and there's just a pan and a plate to be washed.
Simple, quick and delicious.
