Quick Turkey Vegetable Medley Over Rice
Ingredients: 3 tablespoon olive oil 1 cup chopped green bell pepper 1 stalk celery, diced 1 yellow onion, finely chopped Dash of ground white pepper 1 pound boneless turkey breast, cut into 1 inch cubes 1 (14.5 ounce) can stewed tomatoes, drained Dash of sea salt . . . . . . . . 3 cups water 1 1/2 cups uncooked long-grain rice Step-By-Step Instructions: Heat oil in large pan over medium heat. Add onion, green pepper, celery and white pepper. Saute 3 minutes or until vegetables are tender. Add turkey and continue to cook until turkey is no longer pink. Reduce heat to low. Add stewed tomatoes and sea salt. Cover and simmer about 20 minutes or until turkey is cooked completely through. Rice: Bring water to a boil over high heat. Add rice. Reduce heat to low. Cover and cook for 20 minutes or until rice is tender. Serve turkey medley over hot rice. |
