Recipe for spicy potato wedges
Serves 2 2 large potatoes 1 tablespoon of cooking oil (rapeseed gives the best flavour) 2 teaspoons of smoked paprika 2 teaspoons of Jamaican jerk seasoning 2 teaspoons of garlic powder 1 teaspoon of ground chilli seeds (or chilli powder) Fresh ground salt and pepper to taste Pre-heat the oven to 240C. In a polythene bag (the sort you can use for sandwiches or for freezing veg) chuck all the ingredients except the potatoes. Squeeze the spices into the oil to create a nice gooey paste. Cut the potatoes into wedges about 1-1.5cm thick, and add them to the bag of paste. Hold the top of the bag tightly closed and give the bag a good shake so that the potatoes become covered in the spicy paste. Arrange the wedges on a baking tray and bake for about 20-25 minutes until the wedges are crispy on the outside and fluffy in the middle. Finally... enjoy every bite! |
