Celia Fonta,The Art of Flamenco cooks a baked salmon that she frequently serves to friends in Miami. Spanish hospitality is well known, and it is not unusual to arrive at the home of Celia and Paco Fonta and be invited to stay for dinner. One of their popular recipes is this Spanish Baked Salmon with Onions and Potatoes. 4 Salmon fillets
4 medium sized red potatoes sliced
3 onions sliced
½ yellow pepper cut in strips
½ red pepper cut in strips
2 tablespoons olive oil
salt and pepper
Oil a shallow baking dish.
Put a layer of potatoes and onions on the bottom of and up the sides of the dish and sprinkle with olive oil salt, and pepper.
Place the four salmon fillets or steaks on top of the potatoes and onions. Sprinkle salt, pepper and oil on fish.
Spread the remaining potatoes and onions on top of the salmon.
Arrange the red and yellow pepper strips on top of the potatoes and onions. Sprinkle the remaining oil on top.
Cover and bake at 350 F for 45 minutes or until the potatoes and onions and fish are cooked.
This is a very simple, pretty and festive meal that is always well received.
