This is how you prepare croquetas the Spanish way. A similar recipe can be found in Latin America as well. Ingredients:
- 1/2 boneless chicken (as an alternative you can substitute the chicken for fish or)
- 5 tablespoons of flour
- 1 cup of milk
- 1/4 onion
- Virgin olive oil
- 2 eggs
- breadcrumbs powder
- Nutmeg
- 1 pinch of pepper
- Salt
The chicken must be boiled or roasted, and finely chopped.
Put 3 tablespoons of olive oil in a frying pan and fry the chopped onion.
Add the flour to the onion with a pinch of salt, stirring constantly, and after a couple minutes, add the milk gently. Continue stirring and smoldering for several minutes.
Meanwhile add the chopped chicken, a pinch or nutmeg, salt and pepper.
Let cool the mixture for a couple hours for it to form a paste.
Wet your hands and get bits of paste to form the croquettes. Dip them in the in the whipped eggs and bread them.
Fry them evenly in very hot olive oil. Use enough oil to almost cover them, so that you can fry them fast. This way they wont absorb too much oil.
Put them on a dish with a paper towel on it to drain the excess of grease.
