Stuffed Peppers

As an alternative to stuffed cabbage I often cook stuffed green peppers, especially in the summer when peppers are plentiful. I used to use ground beef but I have switched to ground turkey. It works just as well and is leaner. It is alright to use lean beef or ground pork, instead.

12 medium sized green peppers (or red or yellow ones)
2 pounds of ground turkey
½ cup cooked rice
1 teaspoon paprika
2 teaspoons salt
1 egg slightly beaten
1 finely chopped onion
2 cloves of garlic
1-1/2 cups chopped tomatoes or tomato juice

Remove stems from the top of the peppers and carefully scoop out the seeds without breaking the shell. Combine the turkey, rice,chopped onion,garlic, paprika, salt and egg. Pack this mixture loosely in the peppers and arrange in a baking dish. Pour in the tomatoes or juice. Bake for 1 hour at 375 F. The meat should be cooked and the peppers not broken.
